When you think about Colorado comfort food, there’s little wonder about what the harvest from magical places like Pueblo have been yielding for almost centuries: Colorado Green Chili.
More of a gravy actually, authentic Colorado Green (as it’s often reverently referred too) has become a staple to many a Fall meal (best served with a warm fluffy tortilla).
Comforting, calming and tasty.
It also comes as no surprise that The Alley’s genuinely caring General Manager Tommy Scarbrough thoughtfully chose the backdrop of The Alley’s Annual Green Chili Festival to promote funds and awareness for The Beautiful Scar Project.
Now in it’s second year: The turnout was breathtaking.
From the The Alley’s Main Street patio through the authentically local restaurant and welcoming bar. There were families with children. Smiling couples, singles and just happy locals filling The Alley throughout the Saturday event. There was even face painting for children (and a few brave parents) and corn hole flats in The Alley’s wildly popular food truck back patio (actually in the Littleton Post Office alley).
Within the crowd, dozens of local Chili Chefs we tending to a perfect formation of crock pots as far as the eye could see. Green Chili with Chicken, Green Chili with Pork (of every variety from pulled to roasted) and one adventurous batch made with Tofu.
At the end of the afternoon event, the room became peacefully silent as the seriousness of the moment became center stage.
The Beautiful Scar Project is a non profit organization created by Scott and Kim Woods after their son, Caleb Calvin, was born still on December 12th, 2011.
The Beautiful Scar Project’s mission is to provide families grieving the death of their infant due to miscarriage, stillbirth, and neonatal death the tools to turn the loss of their much loved and desired baby into a beautiful scar.
As Scott and Kim thanked everyone for their support, it became clear that not only The Alley, but the City of Littleton cares about its people, its friends and community.
